Chemical Properties: Colorless to white crystal or white crystalline powder, odorless or slightly aromatic. Extremely sweet, still sweet when diluted 10,000 times in water. Its dilute solution is about 500 times sweeter than sucrose and has a slightly bitter aftertaste. Melting point 228℃(decomposition). A saturated solution of 0.25%) is acidic (pH 2.0). Very unstable (decomposition) in acidic conditions (pH below 3.8). It can be decomposed by heating an alkali or its aqueous solution (alkali is more stable than acid). Slightly soluble in water (25℃,1g/ 290mL; Boiling water, 1g/25m1) and soluble in basic solutions (ammonia, hydroxide, soda, etc.). Slightly soluble in ethanol (1g/ 31M1), slightly soluble in chloroform and ether.
